Determination of colorant type in yellow tofu using Vis-NIR and SW-NIR spectroscopy

A method that can detect colorant type in food is requisite against illegal practices used non-food-grade colorants food. In this study types of yellow tofu were identified using visible near-infrared (Vis-NIR) and shortwave spectra (SW-NIR) spectroscopy. Chemometrics analysis partial least square-discriminant (PLS-DA) principal component analysis-linear discriminant (PCA-LDA) to classify natural colorants, food-grade tofu.
